  1. Take 1 qt chicken stock(used Costcos)
  2. Get 3/8 lb pork shoulder julienned
  3. Prepare 3 shitake mushrooms sliced
  4. Make ready 5 pc black fungus chopped
  5. Make ready 1/8 inch slice ginger minced
  6. Get 5 ounce extra firm tofu 1×1/2×1/4"
  7. Get Handful julienned carrots
  8. Take 1/3 cup bamboo shoots julienned
  9. Make ready 1 &1/2 tsp chili paste (Sambal)
  10. Take 3/8 tsp white pepper
  11. Get 3/16 C soy sauce
  12. Take 3/16 C aged vinegar
  13. Get 1/2-1 tsp dark soy sauce
  14. Get 1 egg beaten
  15. Get 2 scallions chopped
  16. Get 1/2 tsp sesame oil
  17. Take 2 Tbs corn starch plus water to make slurry
Instructions to make Hot and sour soup:
  1. Heat stock to boiling in wok
  2. Add mushrooms, carrots, bamboo shoots, ginger, Sambal to pot. Reduce to low and cook 6 to 8 minutes
  3. Add pork that an hour prior was marinated in 1 Tbs soy, 1 Tbs water, tsp corn starch, 2 Tbs cooking oil, 1/8 tsp white pepper and sprinkle of salt. Stir soup to separate pork. Cook 2 minutes
  4. Add all soy sauce, vinegar, 3/8 tsp white pepper and cook 4 to 6 minutes
  5. Slowly add slurry and return to low boil to thicken
  6. When thickened, add beaten egg in spiral pattern. Wait 5-10 seconds, slowly stir to form egg ribbons
  7. Add tofu and sesame oil and cook 2 minutes
  8. Serve with chopped scallions and fried wontons if you like
