Shakshouka (Arabic: شكشوكة, also spelled shakshuka or chakchouka) is a dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic. Shakshuka is a classic Middle Eastern dish where eggs are poached in a spice filled tomato stew.

- Prepare 1 cup lentils - soaked
- Prepare 4 eggs
- Make ready 1/2 cup frozen or fresh cooked spinach
- Take 1 tomato diced
- Take 2 Chopped Green chillies
- Make ready 1/2 medium Brown onion diced
- Make ready 1 clove garlic crashed
- Prepare 1 tsp turmeric powder
- Prepare 1/2 tsp chilli powder
- Prepare 1/2 tsp cumin powder
- Get 1 tsp Salt
- Get 1 tbsp cooking oil
- Get Handful chopped coriander

Steps to make Shakshuka- my version:
- Soak the lentils for at least half an hour. Wash and drain.
- In a pot heat the oil, add onions and garlic, when they turn soft add the Chopped tomatoes, put Salt, turmeric powder, clillie powder and cumin powder. Keep stirring until tomatoes are little bit soft. Add one cup of water, then add lentils. Cover the pot and cook them in medium heat until they are just cooked. Add the spinach, mix them well together. Then crack the eggs on Tops, put the lid back and keep cooking the eggs according to your choice.
- Serve the lentils in a dish, sprinkle Chopped coriander and green chilies on top.
- Serve with steamed rice or roti.
