- Prepare For Kofta –250 g boiled and mashed potatoes
- Prepare 50 gms bread crumbs
- Take 1 tbsp garlic paste
- Prepare 1 tbsp ginger paste
- Take 100 gm paneer grated
- Prepare 1 & 1/2 tsp salt
- Get 1 tbsp corn flour or Arrowroot
- Take 1 tbsp Chopped cashew & chopped raisins (kismis)each
- Make ready 50 gms fresh malai
- Get For curry or Gravy-
- Get 6 medium sized tomatoes chopped (500 gm)
- Prepare 5 onions chopped roughly (500 gm)
- Get 2-3 long,1 inch ginger piece
- Prepare 8-10 cloves garlic
- Take 3-4 green chillies
- Get 1 Tej patta & 1 small piece of cinnamon
- Take 1 small cardamom & 1 big cardamom
- Get 50 gms fresh malai for garnishing
- Get 1 tsp kasuri methi
Steps to make Malai Kofta:
- For making Kofta mix all the ingredients of Kofta except Malai.
- Make equal portion of it to make round or cylindrical equal size ball.
- Make a hole in the middle of each Kofta as shown in the pic & fill up it with very lil amount of malai.If u want u can fill raisin and piece of cashew also in the center.
- Then make fine ball (Kofta) and cover it with Cornflour.
- Took some oil in the pan, heat it and fry all the Koftas till it turns golden brown.
- On the other side take 1 tbsp oil in a pan, add cumin seeds,tej patta,long, cinnamon,big cardamom aswell small cardamomto make tadka..then add ginger, chilly and garlic cloves….stir it well and saute it for 5 minutes.
- Now add onions to it and saute it till it become light brown.. add tomatoes and saute it. Add 1/2 cup of water and stir it well until the tomatoes become smashy.
- Let this mixture cool down for 10 minutes,then took it in a mixie jar, add some water and crushed it properly to make gravy.
- Again take 1 tbsp ghee in a pan,add red chili powder, then add gravy..also add salt to taste,garam masala powder and then add 1/2 cup of water.Boil it for 10 minutes and off the flame.Gravy is ready
- Now it's time for serving..For it in a serving plate put one or two Kofta in the middle of the plate or bowl, pour necessary amount of gravy on it. Garnish it with coriander leaves and white cream. (malai)
